Easy Moist Banana Cake – And It’s Quick Too

This is a super easy moist banana cake which is excellent for using up the bananas that your kids say are just too old and speckled to eat!  I think this banana cake turns out so very moist, because it has a really high proportion of bananas in it.

This is the banana cake recipe I use when I need a big cake to take for a park play! Here’s the cake out in the wild at our local playground.

There’s something about having twins that makes you find and use very quick and easy recipes.

Funny that.

This cake came from a twin mum friend Sarah. She brought it to a multiple birth club Christmas Party. I was fighting my twins for it.

Easy Moist Banana Cake – And It’s Quick Too

This recipe produces a very moist and sweet banana cake. My kids adore it! I doubled the original recipe so makes a large amount. It’s an ideal size of cake for a park playdate with lots of other kids. If I only have a ew bananas I half the recipe and make one large loaf tin sized cake.
Ingredients
  • 350g plain flour
  • 4tsp baking powder
  • 1tsp bicarb of soda
  • 250g melted butter
  • 300g brown sugar
  • 4 eggs
  • 1 tsp vanilla paste
  • 6-8 large bananas mashed
  • – choc chip or sultanas if desired
Instructions
  1. Put oven on, at 160 fan forced or 180 C.
  2. Melt together brown sugar and butter ( I use the microwave). Cool slightly.
  3. Sift and mix together flour, bicarb and baking powder.
  4. Add eggs, vanilla and banana to the sugar/butter mixture and blend up.
  5. Genty fold in the flour.
  6. Add choc chips or sultanas if you fancy.
  7. I cook this in a big square tin at 160 in my fan forced oven. It takes about 45 minutes. Sometimes I make it into muffins or bake as a slice and then it’s about 15 minutes or so. Half the amount makes a large loaf tin or the full amount makes two loaf tins.

Here’s the banana, egg, sugar and butter mixture. I usually use a blender or stick blender but you can just use a fork.

      Hi, it’s just drizzled with melted white and milk chocolate. The cake was warm so the chocolate all ozzed together. Not very healthy!

    I do a banana bread, the kids take it to school. Its one thing I know they will both eat out of their lunch boxes. The 2 at home will also eat it, so its a nice treat for all of them.

    I do love a good banana cake (especially ones with choc chips, warm out of the oven).

    Taking a cake to the playground doesn’t happen anymore with me, but I doubt any cake would last long enough to even make it out the door! Especially if it has the cream cheese icing on it. I think that is a must for my banana cakes, though I like the idea of the melted choc, because, you can never have too much chocolate!

  5. There’s nothing nicer than a bit of moist banana cake. I lived on the stuff when I had newborns. At the rate at which bananas ripen in Summer I shall be making stacks of them no doubt. It’s a great way to use them up and I cannot stand chucking them out, no matter how black they get. My kids will never know.
