Orange Marmalade Muffins – Easy, Tangy + Yummy

I made these orange marmalade in a moment of experimentation. I had been playing around with Donna Hay’s sublime Lemon Yoghurt Cake, it’s a wonderful recipe and I just added an orange angle here.

We’d made the orange marmalade ourselves too, just myself, Minnie The Minx and the Thermomix. Too easy.

Orange Marmalade Muffins

Ingredients

  • 180ml vegetable oil (3/4 cup)
  • 2 eggs
  • 1 cup 280g thick natural yoghurt
  • 385g caster sugar 1 ¾ cups
  • 300g 2 cups SR flour
  • 50g orange marmalade

Instructions

Put on the oven to heat at 180°C.

Whisk together oil, eggs, yoghurt and sugar.

Sieve in flour and stir until smooth.

Swirl in the orange marmalade.

Cook for 15 - 20 minutes.

Drizzle a little orange marmalade on top when still warm.

Scoff the lot... err, I mean eat one and watch the children scoff the lot.

Note to self: an orange marmalade butter cream would be great, or a simple lemon icing.

I’ll be doing a bit of running and walking on that treadmill today too.

Not to burn off the cake calories so much as to exercise the old heart and release some happy hormones.

      It’s baking as we speak. I’m not sure how it’ll be, and I threw in a half tin of condensed milk to the original recipe. What can go long. Will report back.

  10. How terrible to need surgery for an abscess! …and to be told that it was all the way to the bone :0!!! Wow, teenagers are gross! (I have two)

    It was funny to read that you use your treadmill for stress relief and happy hormones. I do the same thing 🙂 …and for the other times there is always wine 🙂

  11. So glad the surgery went well. It’s horrible to watch them go in. I was a mess when Miss H went in – I think she recovered far quicker than me. Oh and those muffins look delish xx
